Marx Foods Oyster Mushrooms

I still had the Oyster mushrooms from my Marx Foods sample box and decided I had to make a seafood dish with these beauties.
I started by rehydrating the mushrooms while I chopped some green onions and garlic and a few button mushrooms and also chopped the Oyster mushrooms when they were ready.

I sauted the mushrooms, green onions and garlic with a little bit of pepper in some melted butter for about 5 minutes. I added a bit more butter and whisked in 3 tablespoons of flour and cooked over a medium-low heat for about a minute. Then the fun started. I continued to whisk in about a cup of white wine and then 1/2 cup of clam juice as well as the clams from the can I got the juice from, a cup of milk and a bit of salt and pepper and cooked over medium heat until it thickened. When the bachamel sauce was ready I poured it into a pie plate that I had lined with uncooked shrimp and sprinkled the top with a bit of parsley from our garden.
I then layered cooked thin potato slices around the top of the pie and garnished with a sprigs of thyme and lemon thyme that we had in our garden. I popped the pie into a 425 degree oven and cooked for about 25 minutes until the potatoes were lightly browned and the sauce was bubbling.
We enjoyed ours with a bit more of the wine used in the sauce. Yum!!!!!!
