Ridiculously Delicious Challenge Stage 2

Getting a box of mystery ingredients and a week to come up with an original recipe using two of those ingredients felt a little bit like I would imagine it would feel to be on an episode of Choppped!! After reading up on all of the ingredients I settled on the Juniper Berries and Szechuan Peppercorns as my two ingredients and used them to make Poached Salmon. After sending Greg out to get the Salmon I started by gathering up the rest of my ingredients: dry white wine (with equal part water), shallots, garlic, parsley, dill and the Marx Foods Juniper Berries and Szechuan Peppercorns.
I brought the wine and seasonings to a simmer in a non-stick skillet.
Then added the Salmon fillets, covered the pan and let them cook for 5 minutes.
While the fillets were cooking I ground up some of the remaining Szechuan Peppercorns to sprinkle on top of the fish.
While making the fish I also had some Brussels sprouts roasting in the oven and fried some mashed cauliflower croquettes to complete the meal.According to the family the meal was a success!!! Now since this is a challenge and I would love to be one of the 15 people to move on to the next round I hope you stay tuned for a reminder to vote on the Marx Foods blog from March 1 though March 4.

I just followed you over from the Marx Foods blog because your recipe sounded so amazing . . . and it looks amazing, too! I love your pictures, and as a lover of all things salmon, I can firmly say I would kill for a bite of this!

That salmon looks good, and the mashed cauliflower croquettes are an interesting side dish. It looks like you had as much fun with the box of ingredients as I did :-) Good luck with the contest!
